
Ingredients:
- 1 cup quinoa
 - 2 cups water
 - 1 bell pepper (sliced)
 - 1 zucchini (sliced)
 - 1 cup broccoli florets
 - 2 carrots (julienned)
 - 2 tbsp olive oil
 - 2 tbsp soy sauce (low sodium)
 - 1 tsp ginger (grated)
 - 2 garlic cloves (minced)
 
Instructions:
- Rinse quinoa and cook it in water as per package instructions.
 - Heat olive oil in a pan, add garlic and ginger, and sauté until fragrant.
 - Add all vegetables and stir-fry for 5-7 minutes.
 - Add soy sauce and cooked quinoa. Mix well and serve hot.
