Quinoa and Vegetable Stir-Fry

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup broccoli florets
  • 2 carrots (julienned)
  • 2 tbsp olive oil
  • 2 tbsp soy sauce (low sodium)
  • 1 tsp ginger (grated)
  • 2 garlic cloves (minced)

Instructions:

  1. Rinse quinoa and cook it in water as per package instructions.
  2. Heat olive oil in a pan, add garlic and ginger, and sauté until fragrant.
  3. Add all vegetables and stir-fry for 5-7 minutes.
  4. Add soy sauce and cooked quinoa. Mix well and serve hot.
