Sweet Potato and Black Bean Tacos

Ingredients:

  • 2 large sweet potatoes (diced)
  • 1 can black beans (rinsed and drained)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 8 small whole-wheat tortillas
  • 1 cup shredded lettuce
  • 1/2 cup salsa
  • 1/4 cup Greek yogurt (optional)

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Toss sweet potatoes with olive oil, chili powder, cumin, salt, and pepper. Roast for 25-30 minutes.
  3. Warm tortillas and fill with sweet potatoes, black beans, lettuce, and salsa. Add Greek yogurt if desired.
